Mushroom Tortellini in Curry Cream

Tortellini is an Italian type of pasta! It's the most delicious! Try at home its really simple!
Ingredients
1
shallot, finely chopped
1 fresh jalapeno pepper, seeded and finely chopped
2 teaspoons
curry powder
1
garlic clove, minced
1 tablespoon cooking oil
1 (14 1/2 ounce) can
reduced-sodium chicken broth
1 (14 ounce) can
unsweetened coconut milk
1 (9 ounce) package refrigerated mushroom tortellini
1 tablespoon
fresh basil, snipped
1 medium
tomato, chopped


Directions
1In a medium saucepan cook shallot, jalapeno pepper, curry powder, and garlic in hot oil about 1 minute or until shallot is tender.
2Stir in chicken broth and bring to a boil.
3Reduce heat and simmer covered for about 5 minutes.
4Stir in coconut milk, tortellini, and basil.
5Cook and stir about 5 minutes more or until pasta is tender but stil firm.
6Stir in the tomato and cook until heated through, but do not boil.
7Ladle into soup bowls and enjoy!

Golden Baked Salmon

INGREDIENTS
1 lb salmon
1/3 cup mayonnaise
1/2 teaspoon salt 1 onion,sliced thin
1 tomato, sliced thin
1/2 cup grated cheese (your favorite)
Dash paprika or black pepper

Place fish in oven-proof baking dish.Sprinkle with salt. Spread with mayonnaise like you are frosting a cake. Best to create a seal to lock in moisture. Top with onion, tomato & cheese. Add paprika or pepper. Bake at 375 for 35 to 40 min. Add small amount of water to dish if necessary for moisture. Enjoy...

yummyy yummy..chocolate brownieesss..


Chocolate Brownies recipe

Ingredients:
¼ cup of unsweetened cocoa powder

½ cup of sifted unbleached flour

2 ½ tablespoon of sotened margarine

1 ½ tablespoon of chopped walnuts

½ cup of sugar

1 egg


Preparation Instructions:
Preheat oven on a high setting.Lightly grease a 3 ½ x 7 ½ inch baking tray.Cream the margarine and sugar in a large bowl.Mix in the cocoa powder, then add the egg and whip the mixture for about 1-2 minutes, until smooth and all the cocoa powder has been combined.Sift the flour and add to the mixture, stir in the nuts.Evenly spread the batter into the tin and bake for 18-20 minutes or until a cake tester comes out slightly moist. Cool the brownine and then cut into 10 squares.

Bruschetta Recipe (simple and delicious!)


Bruschetta is an Italien appetizer, usually the bread is served hot, and the tomatoes cold!
Ingredients:
6 roma (plum) tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, stems removed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese


Directions:
1- Preheat the oven on broiler setting.
2- In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3- Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4- Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5- Broil for 5 minutes, or until the cheese is melted.
